Monday Menu Planning
I hit the floor (figuratively) running this morning. The kids and I were out the door ON TIME thankyaverymuch :D In fact I called hubby from work at 7:40, and he goes "You're already at work?" all shocked. Thanks for the faith man ;)
My eating was fan-friggin-tastic today. I ate 27.5 points and worked out for 45 minutes (8 AP).
Menus!
Monday- Chicken Pasta and Broccoli (While bowtie pasta boiled, I sauteed chicken, then added fresh mushrooms and a can of diced tomatoes and garlic. Tossed it all together and threw a little Parm on top. One box of pasta and one lb. of chicken made TEN servings :O Only 5 pts a serving too :D )
Tuesday- Baked Fish, Carrots, Rice
Wednesday- Chicken Sandwiches, raw veggies and dip (I make focaccia with lots of rosemary, and saute chicken fillets. The focaccia is the "bun" and we top the chicken with roasted bell peppers and guacamole. Weird sounding combo, but SOOOO good. We had this in a restaurant in Austin and I recreated it at home :D)
Thursday- Shrimp Lo Mein (shrimp, carrots, celery, mushrooms, soy sauce, chicken broth, angel hair pasta. YUM!)
Friday- Chicken and Dumplings
Of course, it's going to be in the darn 70's ALL week, so it's not really cold enough for chicken and dumplings, but I love them so :)

Val, it sounds like you had one awesome day! It sure feels good, doesn't it? I am like you, chicken and dumplins are good any time. :-)
